Ingredients:
2 tablespoons olive oil
4 garlic cloves garlic, minced
2 medium shallots, thinly sliced
1 1/4 pounds large shrimp (about 20) peeled and deveined. ( I used frozen shrimp)
1 (11 ounce) package of frozen artichoke hearts, thawed or 1 (14 ounce) can artichoke hearts, rinsed, drained and quartered
1/3 cup dry white whine (I used chicken broth instead)
2 tablespoons fresh lemon juice
2 tablespoons fresh flat leaf parsley
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
Heat the oil in a large skillet over medium heat. Add garlic and shallots and cook, stirring unitl softened but not browned, 2 to 3 mintutes. Add shrimp, artichoke hearts, wine (or chicken broth) and lemon juice and cook until shrimp are cooked through, 3 to 4 minutes. Stir in the parsely, salt and peppper. Divide among 4 plates.
I stirred in some cooked whole wheat angel hair pasta and it was great! You could just eat it the way it is and it is great also. I also halfed the recipe since I am just cooking for 2 and it was plenty. Enjoy!
